Mommy & Me

This is my daughter Jai. She is three years old and my first born. I often find it hard to entertain her, since I am also a full-time student and a full-time business owner. One day I decided that I would take the time to find efficient ways to keep her busy while I got work done.

Dry Erase Activities

I found that drawing on an easel with dry erase markers not only keeps them busy but also limits the mess! This activity allows small children to work on their fine motor skills along with handwriting.

Creating a daily routine for your little one can help you both in a busy and productive week. Having a routine and a daily schedule can allow them to learn how to adapt to the busy schedule.

I know what you’re thinking, and no it does not consist of placing your child in front of a tablet or television all day, however it is important for moms to seek help from other moms. I often refer to YouTube for useful tips when I need a little help.

The Punchy’s Origin Story.

When I started my business in October 2019, it was out of complete desperation. I was a single mom with a minimum wage job, and barely making it paycheck to paycheck.

I needed a way to simply provide for my daughter and I. I always knew that I could cook, but I didn’t know the measures of which I could take my passion. So without any knowledge of how to start a business, I began Punchy’s catering.

I had no way of checking revenue, I had minimal advertising, only posting on my personal social media accounts so that my friends and those who follow me would be able to purchase if they would like. Because I attend a relative campus, Word spread quickly on how my food was not only good but affordable.

After a semester of trying it out, I decided that over the break I would do my research on how I could properly start my business. Overtime, I was able to grow and expand into a delivery business around the campus of Prairie View A&M university.

Now today in 2022, my business has become a semi-successful business serving 100 to 150 meals a day. My goal is to be able to open a food truck to be able to sell my meals across campus and eventually open my first brick and mortar.

My love for cooking continues to grow meal by meal and I will continue to work to leave a legacy for my daughter.

Should the Critical Race Theory be taught in Schools?

As an Education major, we often review issues in the education system in class. This week we were discussing the issue of the Critical Race Theory, and if it was a necessary element to academic success.

We read an article in class explaining why critical race theory has become an issue.

After reading this article, I found that the issue is not necessarily if teaching the critical race theory will slow down academic success. The actual issue at hand is that America is again showing their history of rewriting history.

There is a quote from the linked article that stuck with me. It reads “making laws outlawing critical race theory confirms the point that racism is embedded in the law,” as sociologist Victor Ray noted.

The issue at hand is that the critical race theory exposes racial history of the United States of America. Because history is important, we should not erase a significant part of our history just because it is not the most pleasant. It is essential that we learn critical race theory, so that we can learn from our mistakes as a country.

We have come far as a country, but we still have a long way to go.

Mobile Food Services and the Pandemic

Since the beginning of the Covid-19 pandemic, many restaurant businesses have been negatively impacted across the globe. Covid-19 has changed the world’s dining experiences in a negative way. Multiple restaurants were forced to close temporarily, and some even permanently. This has placed limits on the dine out experience.

With the newly enforced Covid-19 regulations in place, many restaurants were forced to change the way they serve customers. However, mobile food services became a substitute for restaurants being closed for dining. Throughout the pandemic, food trucks and delivery services have remained successful despite Covid restrictions.

Mobile food services have been able to thrive since the start of the pandemic. In fact, the food truck industry became one of the most common start ups since the beginning of the pandemic.

Food trucks have essentially become meals on wheels for those in quarantine. With their flexibility and their design, they are able to quickly substitute indoor dining with delivery.

Thankfully, restaurants have been able to remain successful despite the impact of the pandemic.
